AUS is named for Austin and colored like Barton Springs on a hot afternoon: a smooth, crowd-pleasing coffee with just enough fruit to keep it interesting.
It's grown in the Sierra Madre of Chiapas, Mexico, by smallholder cooperatives, often under shade trees. A medium roast balances milk chocolate and toasted pecan with a little red fruit.
A starting recipe for this medium roast. Weigh it once and you'll never go back to scoops.
Preflight checklist
Pour-over or drip · 1:16
That's what it's for. It's balanced enough for a drip machine, sweet enough to drink black and solid enough for milk.
Grind a little coarser or use slightly cooler water, around 195 to 200°F. If it tastes strong rather than bitter, move from 1:15 to 1:16 or 1:17.
It's roasted within days and shipped fast. Keep the bag sealed, away from light and heat, and grind just before you brew.
Whole beans only: coffee stays fresh longest when you grind it right before brewing. Our coffee-to-water ratio guide shows the grind for each brewer.
US shipping is free on orders of $49 or more, which is any 3 of these bags. Smaller orders ship for a flat $6.95.
