Seattle made dark, heavy coffee famous, and SEA is our nod to it: deep, full-bodied and a little wild, in evergreen green.
It comes from the Gayo Highlands of Aceh, Sumatra, where farmers hull their coffee while it's still damp, a method called wet hulling that's used almost only in Indonesia. That gives it an earthy depth, and a bold roast adds blackberry, cedar and toffee.
A starting recipe for this bold roast. Weigh it once and you'll never go back to scoops.
Preflight checklist
French press · 1:15
Wet hulling, or giling basah, removes the parchment layer while the beans are still damp. It's used almost only in Indonesia and gives Sumatran coffees their low acidity, heavy body and earthy, cedar-like notes.
It's one of the best fits. A French press keeps the oils and the heavy body; start at 1:15 with a coarse grind and a 4-minute steep.
It's roasted within days and shipped fast. Keep the bag sealed, away from light and heat, and grind just before you brew.
Whole beans only: coffee stays fresh longest when you grind it right before brewing. Our coffee-to-water ratio guide shows the grind for each brewer.
US shipping is free on orders of $49 or more, which is any 3 of these bags. Smaller orders ship for a flat $6.95.
