clean finish

COS takes its purple from Pikes Peak, the mountain behind Colorado Springs, and its character from mountains too: clean, sweet and clear, like the air at altitude.
It's grown in Cajamarca, in Peru's northern Andes, by smallholder farmers, many of them organized in cooperatives. A blonde roast keeps it sweet and gentle, with toffee, stone fruit and a clean finish.
A starting recipe for this blonde roast. Weigh it once and you'll never go back to scoops.
Preflight checklist
Pour-over · 1:16
It's blonde, one step darker than light on our scale (FL180). That keeps the fruit and sweetness up front with less sharpness than a true light roast.
Yes. Start at 1:16 with water at 200 to 205°F; the toffee and stone fruit come through clean.
It's roasted within days and shipped fast. Keep the bag sealed, away from light and heat, and grind just before you brew.
Whole beans only: coffee stays fresh longest when you grind it right before brewing. Our coffee-to-water ratio guide shows the grind for each brewer.
US shipping is free on orders of $49 or more, which is any 3 of these bags. Smaller orders ship for a flat $6.95.
